The Bird in Hand winery & olive grove is planted in the mineral rich soils of the 1879 Bird in Hand goldmine in the Adelaide Hills. The Nugent family’s estate grown range of super premium environment friendly olives, oil and wine are widely recognised as South Australia’s finest. Winemaker Andrew Nugent classifies the wine range into one of three old ‘goldmine’ names: Nest Egg, Bird in Hand, Two in the Bush.

Bird in Hand Merlot is a limited release wine aged in French oak.

It is deep red in colour and exhibits intense aromas of plum and mulberry. The complex, well structured palate offers silky tannins, generous fleshy fruit and a succulent and supple texture.
