The wines from Jip Jip Rocks express full varietal flavours, take advantage of the Padthaway’s maritime climate with its long slow ripening season and unique soils. We use traditional winemaking methods, complemented by modern winemaking technology with minimal processing to ensure the purity, integrity, texture and flavour from our vineyard.This non-vintage Sparkling Cuvée has fresh, crisp apple and citrus aromas, with melon and pear characters on the palate. Its persistent mousse leads to a smooth, dry finish. The juice was fermented in stainless steel tanks and then left on lees for further complexity. The resulting wine went through a secondary ferment and was fined prior to bottling.
