The vineyard of the Guibert de la Vaissière Family contains 40 hectares (99 acres) of vines planted in little clearings of 1 hectare maximum, surrounded by more than 1500 hectares of the wild guarrigue. The terrior consists of glacial deposit for the red wines and White Lutetitum limestone for the white wines. The use of modern chemical products are forbidden on the vineyard. There is a great respect of nature and of the expression of the Gassac Valley’s terrior. Grape varieties : 20% Viognier – 20% Chardonnay – 20% Petit Manseng – 20% Chenin Blanc & 20% rare grape varieties from all over the world. 25-30 years old vines Best if served between 11 and 12°C To be drunk young (in the first 18 months) to appreciate its magnificent minerality and very complex fruit aromas. Or, to be kept at least from 4 to 12 years to discover a very rich wine with notes of honey and crystallized fruits. Delicious by itself as an aperitif or with oysters, foie gras or any grilled fish.
